Job Summary


As a Galley Utility / Potwasher, you are the backbone of the culinary operation on board. You will keep all galley (kitchen) areas impeccably clean, sanitize equipment and utensils to strict maritime and public‑health standards, and support chefs and cooks so meals for guests and crew are delivered safely, on time, and to brand standards. This is an entry-level, hands-on role that demands stamina, discipline, teamwork, and an unwavering commitment to hygiene.




Key Responsibilities



  • Wash, sanitize, and store pots, pans, trays, small wares, and kitchen equipment in compliance with USPH/HACCP and company standards.

  • Maintain cleanliness of dishwashing areas, garbage rooms, scullery, walk-ins, freezers, and general galley spaces.

  • Operate and maintain dishwashing machines; perform basic troubleshooting and report faults.

  • Segregate, remove, and compact galley waste according to environmental and MARPOL policies.

  • Assist with daily/weekly deep-cleaning schedules (e.g., ovens, hoods, deckheads, bulkheads, drains).

  • Replenish cleaning chemicals and consumables; follow correct dilution and safety procedures (COSHH or equivalent).

  • Support mise-en-place logistics by transporting clean equipment back to appropriate stations.

  • Accurately complete cleaning logs, temperature records, and checklist documentation.

  • Adhere to all safety drills, PPE requirements, and company policies.

  • Provide flexible support to other galley/restaurant operations as directed by supervisors.




Required Skills and Qualifications



  • Strong knowledge of sanitation and food-safety basics (HACCP / USPH advantageous).

  • Ability to understand and follow Standard Operating Procedures (SOPs) and cleaning schedules.

  • Physical stamina: able to lift, push, pull heavy items; work on your feet for extended periods.

  • Basic English communication (spoken and written) to follow safety and operational instructions.

  • Proven teamwork, reliability, and a positive service attitude.

  • Willingness to work long shifts, 7 days a week during contract periods.




Experience



  • Preferred: Prior experience in a commercial kitchen, hotel, resort, catering facility, industrial dishwasher/scullery, or cruise environment.

  • Not mandatory: Entry-level candidates with the right attitude and work ethic are encouraged to apply.

  • Previous exposure to USPH, HACCP, ISO standards, or similar public-health audits is a plus.




Working Hours



  • Maritime contracts typically involve extended hours (often 10–12 hours per day), 7 days a week throughout the contract period.

  • Rotational contracts commonly range from 6 to 9 months onboard, followed by vacation leave (varies by cruise line).

  • Schedules are rostered to meet operational demands, peak service times, and deep-cleaning cycles.




Knowledge, Skills, and Abilities



  • Understanding of foodborne illness prevention, cross-contamination control, and chemical handling.

  • Competent in operating industrial dishwashers and basic cleaning equipment.

  • Time management and the ability to prioritize cleaning tasks in fast-paced service windows.

  • Attention to detail to meet stringent audit requirements (USPH, internal inspections).

  • Adaptability to multicultural teams and living/working in a confined, shipboard environment.
